Ready To Be Stuffed???
I made stuffed pepper soup tonight following someone else’s recipe. It is DELICIOUS! Well at least that is what my husband says. Personally I don’t care for peppers so I am not going to lie. I didn’t eat it. But that is what we do for our spouses once in a while – right?
Tip # 1 = Garbage Bag
I know another celebrity tells you to keep a garbage bowl around, but why bother washing an extra dish? I personally just up-cycle the bag my veggies came in. This makes life easier since you just toss it out and clean up is done!
Tip #2 = Jar of Minced Garlic
I love jars of minced garlic. I find garlic bulbs to be messy, sticky, and a pain in the butt when you are in a hurry. If you are a purest and want to smash, peel and chop multiple mini wedges – be my guest. I am choosing the jar.
On with the show…
I will give you the link to the “real” recipe, however be warned, I always change things up a bit…For example – I didn’t have any ground beef around so I used pork sausage. The rest at this point is the same. Two peppers, an onion, garlic (out of a jar) and sausage (or ground beef…)
I added the rest of the jazz as called for EXCEPT for the rice. I am in LOVE with my rice cooker that I purchased from the local Asian market. That is how I made my rice – that way you could add as much or as little as you want. Also as left overs the rice won’t absorb all the liquids, you still will be able to eat soup for tomorrow. You can do whatever you so choose!
